Easy Malpua Recipe | How to Make Malpua at Home | Recipe for Malpua | A1SKC Cow Ghee

Malpua is yet another amazing holiday treat. It is perfectly suited for festivals like Diwali, Navratri and Holi. And another plus here is that it is relatively easy to prepare. No wonder it is very popular in areas such as Maharashtra, Orissa, West Bengal, Rajasthan, Bihar and Uttar Pradesh. Each region has a different recipe for making this sweet pancake. However, they all have a creamy richness of milk and of course a variety of flavors brought on by the addition of fruits. You will love the recipe because it is tempting, delicious, and can be served as a healthy dessert with our A1 SKC Cow Ghee.

Ingredients for Malpua:

Wheat flour - 1/2 cup
Sugar - 1/4 cup
Cardamom - 1, Powder
Cooking Soda (optional) - a pinch
Saffron - some strands
A pinch of salt
A1 SKC Cow Ghee - For shallow frying

Ingredients for RABRI (rabri is thickened sweetened milk having layers of malai or cream in it):

Milk - 4 cups
Pistachio - 8
Sugar - 3 tablespoons

Method to prepare Rabri:

1. Boil milk in a wide pot.
2. Add sugar to it and reduce the heat to medium or low.
3. Rabri should be prepared in medium or low heat.
4. Take care not to over heat and the milk gets trapped and burns at the bottom of the pot.
5. Boil and scrap the sides and mix in the cream layer that forms on top.
6. Heat it for every 2 minutes, add soaked, peeled and chopped pistachios in between.
7. Stop heating and repeat the same until the milk reduces and thickens.
8. The color of the milk will change gradually to a yellow colour as cream. As it cools down, the rabri becomes thicken, now switch off the flame. 

Method of preparing Malpua:

1. In a mixing bowl, mix flour, sugar, fennel powder (optional), cardamom powder, salt and saffron, cook soda if desired.
2. Add enough water to make a medium thick batter.
3. In a non stick pan boil some A1 SKC Cow Ghee. Add one tablespoon of batter to the hot cow ghee.
4. Cook on medium heat. Malpua should also be cooked on medium heat and heat should be controlled accordingly and cook till malpua turns golden colour.
